I return to this article from 2010 every now and again to see how the sausage is made, so to speak, at a top restaurant. A trip to eat there is the only reason I consider returning to California; reading the Yelp reviews easily keeps me from doing so.

I followed the link to the behind-the-scenes article. From the look of things, they’re employing Gus Fring as a dish-runner…
