I almost think they were trying to do one of everything – dehydrating, sous-vide, liquid nitrogen chilling, ice cream machine, and so on. You might notice they have several more videos of this insanity; this peculiar Japanese insanity, plus Jiro dreams of sushi, is pushing me towards forgoing my ban on air travel.
