The quote that struck me most from this movie (free streaming on Netflix and Amazon Prime) struck the reviewer from Canada’s National Post:

“You can’t cook rice like this just with big talk.”

The film offers a great look into the methods of a master; his prep cook spent a decade in training before being allowed to cook eggs, which he did many times before it was deemed worthy. One of his prep staff describes wanting to pump his fists and yell the first time Jiro addresses him as shokunin. His fishmonger will only buy the best (single) tuna in the market that day; if he cannot buy that tuna, he returns without tuna for Jiro rather than let Jiro down.

The larger lesson is stated at the outset: all or nothing. Don’t do something if you aren’t going to master it. Jiro dreams of sushi is worth your time.
